Peanut Hoisin Barbecue Sauce

Prep time: 10 minutes


Cooking time: 5 minutes


Makes about 2 cups (500 mL)


Ingredients:


1 tbsp vegetable oil 15 mL


1/2 cupfinely chopped onion125 mL


4 large garlic cloves, minced 4


1 cup ketchup250 mL


3/4 cupwater175 mL


1/4 cup peanut butter 50 mL


1/4 cup lemon juice 50 mL


2 tbsp each hoisin sauce, honey and chili powder 30 mL


1/2 tsp salt 2 mL


1/4 tsp cayenne pepper 1 mL


Directions:


1. Heat oil in a large saucepan (as mixture spatters) over medium heat. Add onion and sauté until soft, about 3 minutes. Add garlic and cook 1 minute. Add ketchup, water, peanut butter, lemon juice, hoisin, honey and seasonings.


2. Bring to a boil, reduce heat and simmer uncovered. Stir occasionally at first and then more frequently near the end of cooking to blend flavours and thicken slightly, about 5 minutes. Ideal for ribs, burgers or chicken.
