Come learn the secrets to making authentic Cajun and French-Creole dishes and youll see why the overall feel of the cuisine is more Mediterranean than North American. Well discuss the global influence and unique essence of this important culinary mecca. Our savory menu includes Blackened Salmon, Corn Maque Choux with Tasso Ham, Red Beans & Rice, New Orleans Olive Salad, Muffuletta Sandwiches, Chicken & Sausage Jambalaya, Crawfish Cakes with Remoulade Sauce, Seafood Gumbo and Dirty Rice. Today youll not only learn to make gnocchi-those heavenly little potato dumplings that melt in your mouth- but youll also learn a myriad of variations on this technique as well as several versatile sauces. Making gnocchi (pronounced 'nee-okkee') takes practice, patience and persistence - and thats why Chef Cody Hogan (Executive Chef at Lidias) is our instructor for this class. Youll have plenty of time and opportunity to perfect your skills as you explore different variations of potato gnocchi: plain gnocchi with two sauces; dessert gnocchi; Gnocchi Offelle (gnocchi from Trieste that is filled with sausage and spinach); Chifeletti di Patate (fried gnocchi crescents); and Strucolo di Verde e Ricotta (a filled gnocchi roll). Youll also make several sauces - from a simple summer tomato sauce to the richest wintry meat sauce and Chef Cody will be there the whole time with evaluations and helpful hints. Youll enjoy lunch (prepared by you and fellow classmates!) and get to take home some gnocchi for dinner as well.
