Here's how to make salmon fishcakes:

Ingredients and supplies:

  • 1 pound fresh salmon filets (can substitute any white fish of your choice)
  • 1 red chili
  • 1 lime or half a lemon
  • 1 egg
  • 1/2 cube ginger
  • 1 tablespoon soya sauce
  • 2 stalks lemongrass
  • 4 spring onions
  • 1 bunch fresh coriander leaves
  • 2 tablespoons olive oil
  • Blender
  • Large skillet
  • Plate
  • Paper towels
  1. Prepare the ingredients. Roughly chop the salmon. Remove the chili seeds for less spicy fishcakes. Juice the lime or lemon, and grate the ginger. Slice the spring onions and chop the coriander leaves. You can substitute ingredients or change their quantities as you wish; it all depends on your tastes.
  2. Blend the fish. In a blender, combine the salmon with the red chili, lemon or lime juice, egg, ginger, and soya sauce. Blend until the fish is broken up.
  3. Add seasonings. Peel the lemon grass stalks down to the tender root. Chop it, and then add to the blender. Also toss in the spring onions and coriander leaves. Blend for one minute.
  4. Fry the salmon cakes. Heat the large frying pan over medium heat. Shape the salmon mixture into small balls, and then flatten them slightly into a cake form. Carefully add a little olive oil to the hot skillet. Cook three salmon cakes at a time, for two or three minutes on each side. Avoid moving the cakes around in the pan until you're ready to turn them, or they could crumble since there is not much holding the salmon together. Do not try to crowd all of the fishcakes into the pan at one time.
  5. Enjoy. Once each salmon cake is done, transfer to a plate covered in paper towels. Keep covered with paper towels or a clean kitchen towel until served. Salmon cakes should be served warm, with tartar sauce on the side. Usually a salad is served on the side.
