Pecan Encrusted Chicken
Tired of the same breaded chicken? Try replacing regular bread crumbs with crushed pecans for a nutty treat. This Pecan Encrusted Chicken has all the crunch of a traditional breading but an unmistakeable nutty flavour that only comes from Southern-grown pecans.
1 tbsp cornstarch 15 mL
1/2 tsp each salt and pepper 2 mL
4 boneless, skinless chicken breasts (tenders removed) 4
1 egg, lightly beaten 1
1 cup panko breadcrumbs 250 mL
1 cup finely chopped Southern U.S. pecans 250 mL
2 tbsp butter 30 mL
In shallow dish, whisk together cornstarch, salt and pepper. Dredge chicken breasts in mixture to coat completely, shaking off any excess.
Pour egg into shallow dish; dredge chicken to coat completely.
Stir together panko crumbs and pecans to combine; coat chicken pieces.
In large skillet, melt the butter over medium heat. Add chicken pieces to pan in a single layer; cook, turning once, until golden brown and cooked through, about 20 minutes.
Transfer to a platter and serve warm.
