This recipe will give you that warm, cozy feeling. It's made with nutritious, hearty ingredients and will leave your home smelling delicious for days. And the best part is, you don't have to tell anyone how easy it is to make a rustic roast chicken.

Prep time: 10 minutes

Cook time: 1 hour

You'll need:

1 clove garlic, minced
2 tsp. fresh thyme, minced
2 tsp. fresh rosemary, minced
1 tbsp. fresh parsley, minced
1 tsp. salt
½ tsp. black pepper
1 tbsp. fresh lemon zest
¼ cup olive oil
1 whole chicken, rinsed and patted dry
1 lemon

Directions:

Preheat your oven to 350ËšF.
In a small bowl, combine all spices, lemon zest and olive oil to make your herbed rub. Mix it until it has the consistency of glue.
Rub the herbed rub all over the chicken, making sure to get areas under the legs and wings.
Cut the lemon in half and stuff the havles inside the chicken. You may also wish to add a few sprigs of fresh rosemary or thyme into the cavity of the chicken for additional flavor.
Tie the legs of the chicken together using kitchen twine.
Oil a roasting pan, and place the chicken onto the centre of the oiled roasting pan.
Place the chicken into the over uncovered for 45 minutes to an hour or until the internal temperature of the chicken's thigh is at least 160ËšF and the juices all run clear. You may wish to baste the chicken in its own juices mid-way through the cooking process. This adds moisture and helps to retain the flavors of the spices.
Remove the rustic roast chicken from the oven and cover with foil wrap for 5-10 minutes, in order to allow the juices to reabsorb into the chicken. Serves 4-5 people.

This is a very versatile recipe. Experiment with different spices and flavorings in your herbed rub. No matter what combination you use, your rustic roast chicken will surely be a hit at the dinner table tonight.
